Water Temp and Dough Hydration

The ferments of your dough and its evolution is significantly swayed by your chosen water temperature. To foster slow fermentation and enriched flavor profiles, select a cooler water temperature at about 45°F (7°C). If a quicker fermentation is desired, select a tepid water temperature around 85°F (29°C). The optimal dough should possess a hydration range—water ratio to flour—between 60-70%, especially for conventional home ovens.

Less Yeast, Longer Fermentation

A pivotal trick for a rich-tasting dough is to minimize yeast use and instead, lengthen the fermentation period. We use a mere 0.2% fresh yeast in proportion to flour for doughs that rest and develop for 24-48 hours, fostering intricate taste development and a more digestible end product.

Role of Salt Beyond Flavor

Salt serves as more than a mere flavor enhancer for your dough; it fortifies the gluten network and tempers the fermentation process. Fine sea salt at 2.5-3% of the flour weight is our recommendation. Introduce it once the water and flour begin to merge, preventing direct contact with the yeast.

Fermentation Mastery

Following mixing, allow the dough to undergo bulk fermentation at ambient temperature for a span of 2 hours, then seggregate into separate dough balls. These portions should be ensconced in sealed containers and refrigerated anywhere from 24 to 72 hours. It's during this phase of cool fermentation that true alchemy occurs—the enzymes delicately convert starches into sugars which contribute both to the dough's nuanced flavor and the crust's caramel hue.

Careful Dough Handling

Come pizza-making time, extract the dough from the cooler 1-2 hours ahead of baking to preheat. Caress the dough lightly to preserve internal gas bubbles. Deploy your digits to gently press and extend the dough, steering clear of rolls which deflate those vital air pockets.

The Culmination: Heat Intensity

While our artisanal ovens soar to an impressive 850°F (454°C), most residential ovens tend to peak at about 550°F (288°C). To emulate, prepare with a pizza stone or steel preheated for a minimum of an hour, imbuing that robust bottom heat crucial for achieving a crisp crust and a fluffy within.
